Dexter beef is notorious for its rich color, good flavor, small cuts and ability to marble on a grass-fed diet. Its a preferred breed of the famous chef, Gordon Ramsay.
When you purchase Dexter Beef from St. Mary's farm you purchase the entire animal or a portion of the animal (1/2 or 1/4). We deliver the animal to the processor who will prepare the cuts on a custom basis per your request. After the beef is dry-aged (10-14 days) and processed, you can pick your beef up at the processor or for a small fee, we deliver to the greater Knoxville TN, Metropolitan Area.
All of our cattle live their entire lives on open pasture in the beautiful East TN Pasture and are grass fed and finished. They are 100% antibiotic and hormone free.
We charge $4.50 per pound hanging weight. Please note that the hanging weight includes bones and trimming. Packaged meat varies by animal but is typically around 50- 60% of the hanging weight. Average hanging weight of a dexter steer is around 300 lbs. Customers are required to make a $100 deposit and pay the remaining balance once hanging weight is provided by the processor.
We will deliver the steer to Down Home Processing https://www.downhomeprocessing.com/. Purchaser is responsible for the processing fees and will coordinate directly with Down Home Processing to select cuts and packaging.
